Job Purpose
The Manager of Food & Beverage is responsible for the strategic leadership, operational excellence, and financial performance of all food and beverage operations within the hotel. This role ensures exceptional guest experiences aligned with five-star standards while driving profitability, innovation, and team engagement across restaurants, bars, lounges, banquets, room service, and catering operations.
Key Responsibilities
Strategic Leadership:
- Develop and execute the overall Food & Beverage strategy in alignment with the hotel’s vision, brand standards, and financial goals
- Lead concept development, menu innovation, and positioning of outlets to maintain a competitive edge in the luxury market
- Collaborate with the executive chef and senior leadership on long-term planning and capital investments
- Oversee daily operations of all F&B outlets, ensuring consistent five-star service, quality, and presentation
- Establish and enforce SOPs, service standards, and hygiene protocols in compliance with local and international regulations
- Ensure seamless coordination between kitchen, service, banquet, and events teams
- Prepare and manage departmental budgets, forecasts, and business plans
- Monitor revenues, costs, labour, and profitability; implement corrective actions as needed
- Analyze market trends, guest feedback, and financial performance to maximize revenue opportunities
- Negotiate and manage supplier contracts to ensure quality, consistency, and cost efficiency
- Champion a guest-centric culture, ensuring personalised and memorable dining experiences
- Handle VIP guests, special events, and high-profile functions with discretion and excellence
- Monitor guest satisfaction feedback and implement continuous improvement initiatives
- Recruit, train, mentor, and inspire a high-performing, diverse F&B leadership team
- Foster a culture of professionalism, accountability, and service excellence
- Conduct performance evaluations, succession planning, and talent development programmes
- Partner with Sales & Marketing to develop promotions, events, and seasonal offerings
- Ensure all F&B outlets reflect brand identity, luxury positioning, and contemporary trends
- Drive sustainability initiatives and responsible sourcing practices where applicable
Requirements
Qualifications & Experience:
- Bachelor’s degree in Hospitality Management, Business Administration, or related field
- Minimum 8–10 years of progressive Food & Beverage leadership experience, with at least 3–5 years in a senior management role within a five-star or luxury hotel environment
- Strong financial acumen with proven experience managing large budgets and multi-outlet operations
- In-depth knowledge of luxury service standards, wine & spirits, and global culinary trends
- Exceptional leadership, communication, and interpersonal skills
- Strategic thinking with strong commercial awareness
- Guest-focused mindset with attention to detail
- Ability to perform under pressure in a fast-paced luxury environment
- High standards of integrity, professionalism, and cultural awareness
- Flexible schedule, including evenings, weekends, and public holidays as required by hotel operations
- The role may involve standing, walking, and on-site presence across multiple outlets
